All About Albacore
Culinary instruction and hands-on demonstration with Jennifer Burns-Bright. Is anything tastier than Oregon albacore fresh off the boat? This presentation will cover what to look for on the dock, breaking down a fillet, freezing, grilling, and delicious ways to cook the tuna. Attendees may be involved in prepping, cooking, and serving this tantalizing fish, as well as sharing a memorable repast. Jenifer Burns Bright is a food and travel writer and retired University of Oregon Food Studies professor. She holds a PhD from the University of California at Irvine and a Master Food Preserver Certificate. The class is limited to 15 people and registration is required.
